Peanut Butter Sandwich Cookies

Ingredients

  • Cookies
  • 8 T. unsalted butter, softened
  • 1 c. crunchy peanut butter
  • 1/2 c. light brown sugar, firmly packed
  • 1/2 c + 1 T. granulated sugar, divided
  • 1 large egg
  • 1 t. vanilla extract
  • 1 c. all-purpose flour
  • 1 t. baking soda
  • 1/4 t. salt
  • Creamy Peanut butter filling
  • 2 3-oz. packages cream cheese, softened
  • 1/2 c. creamy peanut butter
  • 5 T. powdered sugar

Directions

  1. Preheat oven to 375 degrees. Lightly grease two cookie sheets.

  2. Beat together the first three cookie ingredients and 1/2 c. granulated sugar with an electric mixer on medium speed until creamy.Stir in egg and vanilla.

  3. Combine flour, baking soda, and salt in a separate bowl. Slowly stir flour mixture into peanut butter mixture until fully incorporated.

  4. Scoop dough onto prepared cookie sheets, one rounded tablespoonful at a time, about 2 inches apart. (Dough should yield about 24 cookies).

  5. Press cookies flat with the back of a fork dipped into remaining 1 T. of sugar. Sprinkle cookies with any remaining sugar if desired.

  6. Bake 12 minutes or until golden brown around the edges. Remove from oven and cool 5 minutes on pan, then transfer to a wire rack to cool completely.

  7. Make Peanut butter Filling by beating all ingredients until smooth.

  8. Spread about 1 T. of filling onto flat side of 12 cookies and top each with another cookie, flat side down to make a sandwich.
