Creamed Spinach

Ingredients

  • 2 (10oz) bags spinach (large stems removed)
  • 1/2 cup chopped onion
  • 2 to 3 cloves garlic, minced
  • 2 tbs. butter
  • 1 cup whipping cream
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg

Directions

  1. In a large saucepan of rapidly boiling salted water, cook fresh spinach 1minute. Drain, squeeze out excess liquid. Pat dry with paper towels. Coarsely snip spinach with kitchen shears, set aside.

  2. In large skillet, cook onion and garlic in hot butter for 5 minutes. Stir in cream, pepper, salt, and nutmeg. Bring to a boil. Cook, uncovered, until cream begins to thicken. Add spinach. Simmer, uncovered, 2 minutes, or until thickened. Sprinkle with salt and pepper.
