Shrimp Creole

Serves 3 people

Ingredients

  • 14 oz canned diced tomatoes
  • 1 tbsp Ketchup
  • 1 tsp chili powder (more if you'd like some kick to it)
  • 2 tsp packed brown sugar
  • pinch of salt
  • 1/8 tsp cayenne
  • (mix the above 6 ingredients together, put aside)
  • 1/2 chopped green pepper
  • 1/2 chopped red pepper
  • 1/2 chopped yellow pepper
  • 1/3 cup sliced celery
  • 1/2 cup sliced onion
  • cooking oil
  • 1 lb cooked, shelled shrimp

Directions

  1. heat oil. Stir fry peppers, celery & onions 3 minutes. Add shrimp and heat through. Add tomato mixture. Let simmer a couple of minutes. Serve over rice.
