Smokin Chicken Quesadea’s

Ingredients

  • 5-oz can chunk white chicken in water, drained and flaked
  • 16-oz can refried black beans
  • 4-oz can sliced or chopped jalapenos, drained
  • 2-oz can sliced black olives
  • 1/2-tsp chipotle hot pepper sauce
  • 1-cup shredded chedder and monterey
  • 8 medium flour tortillas

Directions

  1. Coat grill rack with spray and light to med-low.

  2. In a bowl, mix everything but the cheese and tortillas.

  3. Put a layer of cheese on one tortilla. Slop on some chicken- bean mix. Put another tortilla on top.

  4. Grill for 2-3 min. per side.

  5. Rest on a plate for a few min., then cut into wedges. Repeat with remaining ingredients.
