Acapulco Salmon

Ingredients

  • 4 salmon steaks 1" thick
  • 15-oz can mandarin oranges in light syrup, drained and chopped
  • 14-oz can zesty diced tomatoes with chilies drained
  • juice of 1 lime
  • 1/2 sweet onion
  • 2-tbsp chopped fresh parsely
  • 1-tbsp virgin olive oil
  • 1/4-tspsalt
  • 1/4-tsp ground black pepper

Directions

  1. In a bowl, mix everything but the salmon, salt, and pepper. Let sit for 30 min.

  2. Start grill to med-hot. Coat salmon with cooking spray and rub in the salt and pepper.

  3. Grill for about 5 min. per side, or until flaks.

  4. Serve with orange-tomato mix.
