Easy Mexican Casserole

Ground beef, salsa and chili beans are layered with tortilla chips and sour cream and topped with melted cheese in this tasty dish.

Ingredients

  • 1 lb lean ground beef
  • 2 cups salsa
  • 1 (16 oz) can chili beans, drained
  • 3 cups crushed tortilla chips
  • 2 cups sour cream
  • 1 (2 oz) can sliced black olives, drained
  • 1/2 cup green onion, chopped
  • 1/2 cup fresh tomato, chopped
  • 2 cups cheddar cheese, shredded

Directions

  1. Preheat oven to 350F

  2. In a large skillet over medium-high heat, cook ground beef until no longer pink

  3. Stir in salsa, reduce heat

  4. Simmer 20 mins, or until liquid is absorbed

  5. Stir in beans, and heat through.

  6. Spray a 9″×13″ baking dish with cooking spray

  7. Spread crushed tortilla chips in dish

  8. Spoon beef mixture over chips

  9. Spread sour cream over beef

  10. Sprinkle olives, onion, and tomato over the sour cream

  11. Top with cheddar cheese.

  12. Bake at 350F for 30 minutes (until hot and bubbly)
