Green Apple Pie made with Tomatoes

Ingredients

  • Pastry for 2-crust pie
  • 4 cups peeled, thinly sliced green tomatoes
  • 1 1/4 cups sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 4 to 5 tablespoons flour
  • 2 tablespoons lemon juice

Directions

  1. Blend all ingredients except tomatoes in large bowl. Add tomatoes and toss to coat.

  2. Place in pastry lined 9 inch pie pan. Adjust top crust, flute edges, cut vents.

  3. Bake 50 to 60 minutes at 425F, until tomatoes are soft and crust is lightly brown.
