Chicken Curry

As stated, this recipe is very spicy. I often reduce the number of serranos to 4 and chili powder to 2 T.

Ingredients

  • 2 lbs skinned bone-in chicken legs, quartered
  • 5-6 serrano peppers, quartered lengthwise
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 4 T vegetable oil
  • 1 inch ginger root, shredded
  • 2 T salt
  • 3 T chili powder
  • 4 T coriander powder
  • 1/2 t turmeric powder
  • 1/4 t cinnamon powder
  • 1/4 t clove powder
  • 10 - 12 stalks cilantro, cut into thirds

Directions

  1. Add oil to large pot over medium heat. Add pepper, ginger and onions. Sauté for 3 min.

  2. Add tomatoes. Continue to sauté for 5 minutes or until onion looks clear.

  3. Add chicken and turmeric. Stir and cook for 5-8 min, covered.

  4. Add salt, coriander, chili, cloves, cinnamon. Continue cooking for 10 minutes. Keep covered, stirring occasionally.

  5. Mix in cilantro.

  6. Serve over rice, or with chapatis.
