Thin Pear Tart

Ingredients

  • 1-1/2 cups cake flour, chilled
  • 1/4 cup sugar
  • 1/4 cup plus 2 Tbs unsalted butter, chilled
  • 1/4 cup cold water
  • 3 pears, peeled, halved, cored and cut into 1/8 inch slices
  • 1/4 tsp cinnamon

Directions

  1. Preheat oven to 350°F. Combine flour and 1 Tbs. sugar in a food processor or mixing bowl. Cut in butter until mixture resembles coarse meal. With machine running, gradually add cold water. Stop mixing when dough forms a ball. Transfer dough to a lightly floured work surface. Roll dough into a 13 inch circle.

  2. Press into a 12 inch tart pan or shallow baking pan. Trim excess dough from edges. Sprinkle with 1 Tbs. sugar.

  3. Starting from the outside, overlap pear slices in a circular pattern on dough. Continue arranging pear slices until dough is covered. If a hole remains in the middle of tart, fill with chopped pears. Sprinkle pears with remaining sugar and cinnamon.

  4. Bake 20 minutes. Turn on broiler and broil 1 minute or until sugar is caramelized. Remove from broiler and cool slightly. Cut into wedges.

  5. This recipe serves 8 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 8 only.
