Sweet Potato Shepherd’s Pie

Ingredients

  • 4 garlic cloves
  • olive oil
  • 2 1/2 lbs ground turkey
  • 1 jar Newman's Own Medium Salsa
  • basil
  • thyme
  • paprika
  • ground mustard
  • ground black pepper
  • 29 oz tomato sauce
  • 3 large sweet potatoes
  • 1/4 stick butter
  • cinnamon
  • non-stick cooking spray

Directions

  1. Chop 4 cloves garlic and brown in oil. Add 2 packages ground turkey (about 1 1/2 lbs total) and brown it. Add one jar salsa. Cook for 5 to 10 mins, stirring occasionally.

  2. Season to taste with basil, thyme, paprika, mustard, and pepper. Add 3/4 of the can of tomato sauce. Cook for about 25 mins., allowing mixture to reduce and thicken. Stir periodically.

  3. Preheat oven to 400 degrees. While the meat mixture is cooking, prepare the sweet potatoes. Peel and boil the potatoes. Fork-mash them roughly (not a fine whip, a coarse mash) with 1/4 stick of butter and some cinnamon.

  4. Pour meat mixture into a greased casserole dish. Cover with the sweet potatoes mash. Bake uncovered for 35 to 40 minutes at 400 degrees, or until slightly browned on top.
