White and Green Pizza

Ingredients

  • 5 ounces fresh (or frozen, defrosted) baby spinach
  • Salt and pepper to taste
  • 2 tablespoons water
  • 1 cup part-skin ricotta
  • 1/2 teaspoon garlic powder
  • 2 mini pizza crusts (such as Boboli 5 ounces each
  • 1/2 cup shredded reduced-fat mozzarella
  • 2 tablespoons grated parmesan
  • 1 tablespoon olive oil

Directions

  1. Heat oven to 450 degrees.

  2. Meanwhile, put spinach in a microwave-safe casserole dish.

  3. Season to taste, and sprinkle with water.

  4. Cover with plastic wrap, and pierce to vent.

  5. Microwave on high for 2 minutes.

  6. Drain well.

  7. Mix ricotta and garlic powder in a small bowl.

  8. Place the pizza crusts on an ungreased baking sheet, and spread half the ricotta mixture on each one.

  9. Top each pizza with cooked spinach, mozzarella, and parmesan.

  10. Drizzle with olive oil.

  11. Bake for 10 minutes, or until the cheese is melted.

  12. Cool slightly and cut each pizza in half to serve.
