Oven-Fried Chicken

Ingredients

  • 1 tablespoon margarine or butter
  • 2/3 cup Original Bisquick
  • 1 1/2 teaspoons paprika
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon pepper
  • 3- to 3 1/2-pound cut-up broiler-fryer chicken

Directions

  1. Heat oven to 425 degrees.

  2. Melt margarine in rectangular baking dish or pan, 13 × 9 × 2 inches, in oven.

  3. Mix Bisquick, paprika, salt and pepper.

  4. Coat chicken with Bisquick.

  5. Place skin sides down in pan (pan and margarine should be hot).

  6. Bake uncovered 35 minutes; turn chicken. Bake about 15 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.

  7. Mexican Oven-Fried Chicken: Decrease Bisquick to 1/2 cup. Add 2 tablespoons yellow cornmeal and 1 to 2 tablespoons chili powder.

  8. Parmesan Oven-Fried Chicken: Decrease Bisquick to 1/3 cup and salt to 1 teaspoon. Add 1/2 cup grated Parmesan cheese.
