Kentucky Derby Bourbon Pie

Hey Dad here’s the recipe:

Serves 8 people

Categories: desert pie

Ingredients

  • 1 recipe Pastry for Single-Crust Pie
  • 3 eggs lightly beaten
  • 1 cup packed dark brown sugar
  • 3/4 cup light-colored corn syrup
  • 1/4 cup butter, melted
  • 2 Tbs bourbon- Old Grandad
  • 1 tsp vanilla
  • 1/2 cup semi-sweet chocolate pieces
  • 1/2 cup chopped walnuts or pecans
  • 1/4 tsp salt

Directions

  1. In a medium bowl, combine eggs, brown sugar, corn syrup, melted butter, bourbon (if you like) and vanilla.

  2. Stir in chocolate pieces, nuts and salt until well combined.

  3. Pour into pastry-lined pie plate.

  4. To prevent over browning, cover edge of pie with foil.

  5. Bake in a 375 degree F oven for 20 minutes.

  6. Remove foil.

  7. Bake for 20-30 minutes more or until the crust is golden and a knife inserted near the center of the filling comes out clean.

  8. Let cool for at least 2 hours before cutting.
