burmese curry

adapted from vegetarian times to be main course for 8th day pesach meal) This recipe originally only had potatoes. And half the proportions for the curry ingredients, I have doubled the curry ingredients and figure we’ll add a head of cauliflower and 4 tomatoes. But if you’d like to do it differently we could do it differently.

Ingredients

  • 2 large onions
  • 2 TBS minced garlic
  • 2 TBS minced fresh ginger
  • 2 tsp turmeric (we will go without)
  • 2 tsp red chili powder – we will replace with 1 fresh chili pepper
  • 1 cup vegetable oil (Burmese curries can be pretty oily, I can cut down on this…)
  • 2 TBS sesame oil (will we have peanut oil? It would be a good substitute)
  • 4 med or 3 large potatoes pealed and cut into large chunks
  • salt to taste
  • fresh cilantro for garnish (optional)
  • 1 head cauliflower choped
  • 4 tomatoes chopped in big pieces

Directions

  1. mash the first 5 ingredients together and heat in the vegetable oil over medium heat FOREVER until onion paste darkens.

  2. You can add water to prevent sticking or burning.

  3. Add sesame oil 1 cup water and potatoes and cook until the potatoes are soft season with salt.

  4. At some point add the other veggies and cook.
