corn bread griddle cakes

Ingredients

  • 2 c self rising cornmeal
  • 1 c all purpose flour
  • 1 1/2 c milk
  • 1/3 c butter, melted
  • 2 large eggs, lightly beaten
  • 1 T sugar
  • 1/4 t ground red pepper

Directions

  1. stir together all ingredients, just until moist

  2. pour 2 T batter onto a hot, greased griddle

  3. cook cakes 2-5 min or until edges looked cooked and dry then flip to other side
