Chicken Breasts Dijon

Ingredients

  • 1/3 cup dry breadcrumbs
  • 1 Tablespoon grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoon Dijon mustard
  • 4 (4 oz.) skinless, boneless chicken breast halves
  • 1 teaspoon olive oil
  • 1 teaspoon reduced-calorie stick margarine

Directions

  1. Combine first 6 ingredients in a shallow dish or pie plate, stir well.

  2. Brush mustard over both sides of chicken, dredge in breadcrumbs mixture.

  3. Heat oil and margarine in a large nonstick skillet over med-high heat.

  4. Add chicken and cook 6 minutes on each side or until done.
