Ingredients

  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 small jar pimento
  • 1 can black eyed peas
  • 1 can pinto beans or black beans
  • 1 bell pepper- red, gold, or both
  • 1 can shoepeg corn, Green Giant
  • 1 to 2 tablespoons finely chopped jalapeno
  • salt and pepper
  • 1/2 cup apple cider vinegar
  • 3/4 cup vegetable oil
  • 1/2 cup sugar
  • Scoop tortilla chips

Directions

  1. Drain all canned ingredients.

  2. Combine 1st nine ingredients.

  3. Heat vinegar, oil, and sugar on stove. Stir until sugar is dissolved. Remove from heat and cool. Pour over other ingredients and stir to coat. Keep refrigerated until ready to serve.

  4. Serve with tortilla chips.
