Whole Wheat Squash Muffins

Ingredients

  • 1 c. whole wheat flour (can sub half white whole wheat flour)
  • 1/2 c. rolled oats
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/2 tsp. cinnamon
  • dash of nutmeg
  • dash of cloves
  • 1/4 tsp. salt
  • 2 eggs
  • 1 cup pureed cooked winter squash (butternut squash or acorn)
  • 1/4 c. chopped scallions or chives (or mixture of both)
  • 1/2 c. buttermilk
  • 1/3 c. honey
  • 1/4 c. vegetable oil
  • 1/2 c. shredded cheese (cheddar or mixed cheeses)

Directions

  1. Preheat oven to 375 deg F.

  2. Mix wet ingredients.

  3. Mix dry ingredients.

  4. Combine wet and dry ingredients then fold in cheese.

  5. Fill muffin cups 1/2 full and bake for 20-25 mins.

  6. Makes 11-12 muffins.
