Slow Cooker Cranberry Pork

Ingredients

  • 1 pork loin, 3-4 lbs.
  • 2 tbsp. vegetable oil
  • 1 16 oz. can cranberry sauce
  • 3/4 cup sugar
  • 1 cup cranberry juice
  • 1 tsp. dry mustard
  • 1 tsp. pepper
  • 1/4 tsp. ground cloves
  • 2 tbsp. cornstarch
  • 1/2 cup cold water

Directions

  1. Brown roast in dutch oven over med. high heat. Freeze pork loin. Combine all ingredients but the last three and freeze in small freezer bag taped to the pork loin bag.

  2. When thawed, mix together all ingredients and pour over roast. Cover and cook on low for 4 to 6 hours or until a meat thermometer reads 160 degrees. Remove roast and keep warm.

  3. In a saucepan, combine cornstarch, cold water, and salt until smooth. stir in cooking juices. Bring to a boil, cook and stir for 2 mins. or til thickened. Serve with roast.
