turkey enchildas

great way to use leftover turkey, measurements of the butter,flour, milk and broth are approximate since i make this basic white sauce from memory (may be way off, sorry)

  • 1 lb. leftover turkey
  • 1 10 oz. can mild green enchilada sauce
  • 2 tbsp. butter
  • 3 tbsp flour
  • 1.5 cups milk
  • 1.5 cups chicken broth
  • 1/2 lb. monterey jack cheese, shredded
  • 1 package of 10-12 white tortillas


  1. make white sauce, add can of enchilada sauce. Fill tortillas with turkey roll up and place in casserole dish. Pour sauce over chicken and sprinkle with cheese. Bake in oven until cheese is melted, 10-15 minutes
