Taco salad with fritos and ground beef

Ingredients

  • 1 bag of "scoops" Fritos
  • half a head of green leaf lettuce
  • 4 roma tomatoes
  • half can olives, sliced
  • 1 lb. ground beef or ground turkey
  • 1/4 cup sour cream
  • 1/4 cup plain yogurt
  • 4 tbsp. milk
  • 3/4 cup shredded cheddar cheese
  • 1 can trader joe's black beans

Directions

  1. Cook beef or turkey (may be done 1-3 days in advance)

  2. Wash lettuce and tomatoes. Drain lettuce really well and tear into bite size pieces. Cut tomatoes. Slice olives.

  3. Shred cheddar.

  4. Mix sour cream and yogurt (this may be too much, use good judgement and measure for more accuracy next time). Add milk (one tbsp at a time) and mix in well. End consistency should be somewhat drippy. More milk may be necessary. This will be the “dressing”.

  5. TO SERVE: Place fritos on plate or bowl. I thought a little went a long way so don’t overdo it. Throw some lettuce atop fritos, tomatoes atop lettuce, beef atop that, and finally olives sprinkled all over and then drizzle sour cream dressing atop all of it. I meant to add black beans to the mix and forgot. Would’ve been even more filling and more protein.

  6. Eat, enjoy.
