New Orleans Sweet Potatoes for Thanksgiving

Ingredients

  • 5 large sweet potatoes, not yams
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1/3 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup light brown sugar
  • 1/3 cup melted butter
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees.

  2. Bake sweet potatoes until tender for about 40 minutes.

  3. Remove from oven.

  4. When cool enough cut in half and scoop out the insides into a large mixing bowl.

  5. Mash.

  6. Mix in softened butter, sugar, eggs, vanilla, and milk with mashed sweet potatoes.

  7. Pour into a baking dish.

  8. In a saucepan bring cream to a simmer.

  9. Add brown sugar and cool over medium heat until it reaches a soft ball stage on a candy thermometer.

  10. Remove from heat, add melted butter and chopped pecans.

  11. Pour over sweet potato mixture.

  12. Bake until very hot and beginning to brown.
