Oatmeal Almond Granola

Ingredients

  • 1 large egg
  • 4 tablespoons (1/2 stick) butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup Nature Sweet Crystals sugar replacer
  • 1 1/4 cups rolled oats, not instant or quick-cooking
  • 3/4 cup sliced almonds
  • Vegetable oil cooking spray

Directions

  1. Preheat the oven to 350F and line a baking sheet with parchment paper or a silicon nonstick liner. This is an important step, because without a liner, the mixture will adhere to the pan.

  2. Whisk together the egg, butter, vanilla cinnamon, and Nature Sweet until smooth. Add the oatmeal and almonds, mix well to coat. Press the mixture into a thin solid layer on the prepared baking sheet. Bake for 12 to 14 minutes, until golden; cool and then break into bite-size pieces. Store in an airtight container or resealable plastic bag.
