Pork Chops with sweet potatoes and pears

Ingredients

  • 1 tbsp. vegetable oil
  • 2 tbsp. all purpose flour
  • 1 tsp. curry powder
  • 3/4 tsp. table salt
  • 1 pound lean boneless pork chop, four 4 oz. pieces
  • 15 oz. canned sweet yams, in syrup, drained
  • 1//2 tsp. dried thyme
  • 1/8 tsp. black pepper

Directions

  1. In a large nonstick skillet, heat oil.

  2. In a large sealable plastic bag, mix flour, curry powder and 1/4 tsp. salt. Add pork and shake to coat.

  3. Transfer pork to skillet. Saute until cooked through, about 3 minutes on each side.

  4. Meanwhile, cut yams into bite size chunks. Add to pork with pears, reserved pear juice, thyme, pepper and remaining 1/2 tsp. salt. Reduce heat and simmer until pork is cooked through, about 2 minutes longer.

  5. For a slightly different flavor, use pineappple chunks or apricots in place of the pears or swap winter squash for the sweet potatoes.
