Ham and Cheese Omelet

Ingredients

  • 2 large eggs
  • 4 large egg whites
  • 1/8 tsp. hot pepper sauce or to taste
  • 1/4 tsp. table salt
  • 1/8 tsp. black pepper
  • 2 tbsp. scallions, minced
  • 1 spray cooking spray
  • 1/2 cup cooked lean ham, finely diced
  • 1/4 cup shredded Parmesan cheese, Parmigiano-Reggiano suggested

Directions

  1. In a large bowl, beat together eggs, egg whites, hot suace, slat and pepper and scallions.

  2. Coat a large nonstick skillet with cooking spray. Heat over medium heat. Pour in egg mixture and tilt skilletpan so bottom is completely covered with egg. Cook omelet until eggs are almost set, occasionally lifting egg in skillet to let uncooked egg to move to edges of skillet, aobut 3-5 minutes.

  3. Sprinkle ham and cheese over eggs. Using a spatula, ease up edges of omelet and gently fold in half, cook until heating through, about 1 minutes
