Cornbread Salad

Serves 10 people

Ingredients

  • 1 lb. bacon, cooked and crumbled
  • 1 red bell pepper, chopped
  • 1 cucumber, seeded and chopped
  • 1/4 cup sliced green onion
  • 5 cups crumbled toasted cornbread
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 tbl. dry Ranch dressing mix

Directions

  1. In a large bowl, combine bacon, bell pepper, cucumber, tomatoes, green onion, and cornbread.

  2. In a small, whisk together milk,sour cream, and dressing mix. Pour over salad just before serving, tossing gently to coat.
