Cape COd Chopped Salad

Ingredients

  • 8 ounces thick cut bacon
  • 8 ounces baby arugula
  • 1 large Granny Smith apple, diced
  • 1/2 c. toasted walnut halves, chopped
  • 1/2 c. cranberries
  • dressing:
  • 3 T apple cider vinegar
  • 1 tsp. grated orange zest
  • 2 T. fresh squeezed orange juice
  • 2 1/2 tsp. Dijon mustard
  • 2 T. pure maple syrup
  • salt
  • 1/2 tsp. ground black pepper
  • 2/3 c. olive oil

Directions

  1. preheat oven 400

  2. roast bacon on a sheet pan 20 minutes

  3. Toss together the arugula, apple, walnuts cranberries and blue cheese

  4. Dressing: whisk together all ingredients

  5. Chop bacon in large pieces and add to the salad, toss with enough dressing to moisten. Sprinkle with salt and serve immediately
