Chicken with Broccoli

Ingredients

  • 1 lb. skinless, boneless chicken breast
  • 1 lb. fresh broccoli
  • 1 small onion
  • 1 tbsp ground ginger
  • 2 tbsp cornstarch, split
  • 3-4 carrots
  • 3 1/2 tbsp soy sauce, split
  • 1/4 tsp garlic powder
  • 1 1/4 cup water

Directions

  1. Cut chicken into bite size pieces.

  2. Add to small bowl with ginger, garlic powder, 1 tbsp cornstarch, and 1 1/2 tbsp soy sauce. Mix and set aside.

  3. Chop broccoli and onion. Slice carrots diagonally.

  4. Stir fry chicken in hot wok with 2 tbsp oil until brown.

  5. Add veggies and stir fry 2 to 3 minutes.

  6. Add water mixed with the remaining soy sauce and cornstarch.

  7. Cover and cook 5-8 minutes, or until carrots are semi-tender.
