Danielle Berg’s “Chicken and Mole” (Guatemala)

apparently no one told the mayans that you can’t combine chocolate, tomatoes, chicken, and hot chiles. it may sound like a strange combination, but this distinctive flavor is phenomenal!

Ingredients

  • -one onion
  • -a few cloves garlic
  • -minced ginger
  • -a dash of cayenne pepper to taste
  • -chopped chicken breast(uncooked) or whole thighs and drumsticks
  • -one can diced tomatoes with green chiles or jalepenos
  • - one can chicken broth - a couple of cinnamon sticks
  • - one large bar of dark chocolate, broken into chunks
  • -one bunch of chopped cilantro.

Directions

  1. saute in vegetable oil in a large wok or deep skillet: first four ingredients. Once onions are soft add chopped chicken breast or whole thighs and drumsticks. braise until partially cooked, then add the can of tomatoes with green chillies or jalepenos. Stir the chocolate in until it melts, allow mole to simmer until everything is cooked well through. Finally add cilantro. Simmer a few more minutes and serve with rice or fried plantains.
