Leek and lima bean soup

Ingredients

  • 2 TBL olive oil
  • 2 leeks
  • 2-3 cups lima beans (cooked - I used white)
  • 1 carrot, diced
  • 3 cups broth
  • half inch of ginger grated
  • 1/4 tsp cumin
  • 1/4 tsp nutmeg
  • dash of cinnamon
  • salt and pepper to taste
  • lime and sour cream for serving

Directions

  1. Sautee leeks for about 6 minutes.

  2. Add the carrots and spices and sautee for fee more minutes.

  3. Add lima beans and broth and cook for 20-30 minutes.

  4. Blend, squeeze in lime juice to taste and serve with dollop of sour cream.
