Apricot Fool

Ingredients

  • 250g dried apricots
  • 1 1/2 c plain yoghurt
  • 2/3 c thickened cream
  • 1/2 orange
  • brown sugar or honey

Directions

  1. Soak the apricots overnight in water, then simmer in the same water until tender.

  2. Blend, using just enough water to make a thick puree.

  3. Add yoghurt, cream and the zest of half an orange.

  4. Sweeten to taste, then chill.
