Coconut Wafers

Ingredients

  • 2 egg whites
  • 1/2 c caster sugar
  • 60 g butter, melted and cooled
  • 1 tsp vanilla
  • 1 tsp coconut essence
  • 1/2 c flour
  • 1/2 c chredded cocnut, toasted

Directions

  1. Oven 180C

  2. Beat egg whites and sugar with a fork until smooth.

  3. Add the cooled melted butter, vanilla and cocnut essences and flour. Stir until well combined

  4. Spread 1/5th of the mixture onto lined baking trays, covering the whole surface of each tray.

  5. Sprinkle with cocnut.

  6. Bake 8-10 minutes, remove from the oven and allow to cool completely.

  7. Repeat with remaining miture.

  8. When cool, break into large pieces and store in airtight containers for up to 1 week.
