Cowgirl Salsa

this is my approximation of a recipe from Cowgirl restaurant in Santa Fe

Ingredients

  • 1 can black-eyed peas, drained but not rinsed
  • 1 can Rotel
  • 1/2 a red onion, chopped
  • 1/2 tablespoon lime juice
  • 1/8 teaspoon salt

Directions

  1. combine all in a medium bowl.

  2. let sit 15-20 minutes before serving, stirring occasionally.
