Pear and Almond Pizza

Ingredients

  • 1 eggwhite
  • 1/4 c sugar
  • 1/2 c blanched almonds, ground
  • 25g white chocolate, finely chopped
  • coarsse semolina (to dust)
  • 1 qty pizza dough
  • vanilla icecream to serve
  • 2 tbsp flaked almonds, toasted
  • icing sugar, to dust
  • Poached peasr, sliced

Directions

  1. Whisk eggwhite until soft peaks form, then gradually add the caster sugar until the mixture is thick and glossy. Add the ground almonds and mix well.

  2. Preheat pizza stone to 250C.

  3. Dust workbench with semolina, the roll out the dough into 2 15cm rounds. Place on pizza tray and prick with fork. Spread each with 3 Tbsp almond mixture, spirnkle with chocolate and top ith sliced poached pear.

  4. Bake 5 minutes or until bases are golden and crisp.

  5. To serve top with icecream and dust with icing sugar.
