Passionfruit Yoyos

Ingredients

  • 250g butter, at room temperature
  • 2/3 c caster sugar
  • 1 tsp vanilla
  • 1 3/4 c flour
  • 1/2 c rice flour
  • 60g butter, at room temperature
  • 1 c icing sugar, plus extra (to dust
  • 2 tbsp passionfruit pulp

Directions

  1. Preheat oven 150C (130C fan forced).

  2. Cream butter and sugar, stir in vanilla.

  3. Sift flours over butter, stir to combine.

  4. Knead dough on a floured surface, Roll dough into balls, place on trays, flatten sllightly with a fork.

  5. Bake for 12-15 minutes or until slightly browned underneath.

  6. Cool completely.

  7. Beat butter until creamy, add 1/3c sugar at a tme until well combined. Stir in passionfruit pulp. Sandwich mixture between biscuits.

  8. Dust with extra icing sugar.
