Southwest Quiche

Ingredients

  • Nonstick cooking spray
  • 8 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter or margarine
  • 2 cups shredded monterey jack cheese
  • 1/2 cup diced roasted green chiles

Directions

  1. Generously coat the bottom and sides of the slow cooker with cooking spray

  2. In a separate bowl, thoroughly mix remaining ingredients together and pour into the slow cooker

  3. Cover and cook on low for 3 to 4 hours

  4. While the quiche is still in the slow cooker, slice into four slices and carefullly remove with a spatula

  5. Serve with fresh salsa

  6. makes 4 servings
