New Zealand Holly Cookies

76 calories per cookie. The dough should be chilled before rolling to make it easier to work with. Instead of light dusting, you need a ton of flour.

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 3/4 teaspoon baking powder
  • 1/2 cup margarine
  • 1 egg, beaten
  • 1/4 cup milk
  • 2/3 cup raspberry jam
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 3 tablespoons milk
  • red cinnamon candies
  • green food coloring

Directions

  1. Combine flour, sugar, cinnamon, baking powder, and salt.

  2. Cut in margarine until pieces are the size of small peas.

  3. Make a well in the center.

  4. Combine the egg and 1/4 cup milk; add all at once to dry ingredients.

  5. Stir until moistened.

  6. On a lightly floured surface, roll dough to 1/8 inch thickness.

  7. Cut into 2 inch circles or flowers with a cookie cutter.

  8. Place on an ungreased cookie sheet.

  9. Bake at 375 for 8 to 10 minutes or until lightly brown.

  10. Cool on a wire rack.

  11. Place 1/2 teaspoon raspberry jam on one cookie and top with another.

  12. Frosting: Make frosting with powdered sugar, vanilla and milk.

  13. Spread on top of each cookie.

  14. While icing is still wet place three cinnamon candies on the cookie.

  15. Allow icing to dry.

  16. Using small paintbrush, paint several holly leaves and stem on each cookie with green food coloring.
