Blue Cottage Cheese Dip

Ingredients

  • 1 1/2 cups fat-free cottage cheese
  • 3 tablespoons fat-free milk
  • 2 teaspoons finely chopped onion
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Pinch of cayenne pepper
  • 1/2 cup crumbled bleu cheese (can sub with vegetarian variety such as
  • Point Reyes Original Blue Cheese)

Directions

  1. Place cottage cheese, milk, onion, lemon juice, salt and peppers in a

  2. blender. Cover and blend on medium until smooth. Pour into a bowl and

  3. stir in bleu cheese; if you prefer a smooth dip, blend cheese in with

  4. other ingredients.

  5. Cover and refrigerate at least one hour to blend flavors. Serve

  6. chilled
