Eggplant Croquettes

My boyfriend and I have nicknamed these “Eggplant Burgers” because of their shape and similar texture to a hamburger. I enjoy these more than veggie burgers, and they are a helluva lot more satisfying!

Serves 5 people

Ingredients

  • 1 large eggplant, peeled and cubed
  • 1 cup of shredded sharp cheddar
  • 1 cup of Italian seasoned bread crumbs
  • 1 egg
  • 2 tbsp parsley
  • 2 tbsp chopped onion
  • 1 clove of minced garlic
  • 1 cup of vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Place chopped eggplant in a microwave safe bowl and microwave for 3 minutes.

  2. Turn the eggplant and microwave for an additional minute or two, until tender.

  3. Drain any remaining liquid and mash.

  4. Combine cheese, breadcrumbs, egg (beaten first), parsley, onion, garlic, salt, and pepper with the mashed eggplant.

  5. Mix well and shape the mixture into patties.

  6. Heat oil in a large skillet and fry each patty until golden brown (about 5 minutes on each side)

  7. Patties can be frozen before frying and cooked later if you wish.

  8. Serve the patties as burgers on a bun with lettuce, cheese, onion slices, dressed with mayo, honey mustard dressing, thousand island dressing, or ketchup.

  9. A fancier way to eat them is with tomato sauce drizzled on top or over a crisp salad.
