Mix & Match Muffins

Ingredients

  • Streusel topping(optional):
  • 1/3 cup flour
  • 1 1/2 Tblsp. cold butter, chopped into small pieces
  • 1/4 tsp. cinnamon
  • pinch of nutmeg and salt.
  • Wet Ingredients:
  • 6 Tblsp. butter, room temperature
  • 1/2 to 3/4 cup sugar
  • 1 egg
  • 1/2 cup + 2 Tblsp. milk
  • 1/2 tsp. vanilla
  • 2 cups chopped fruit and/or nuts, and/or chips.
  • Dry ingredients:
  • 2 cups white flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon or other spice (optional)

Directions

  1. Preheat oven 350ยบ

  2. Oil or line 12 cup muffin pan.

  3. Mix streusel ingredients together and blend until butter is pea sized or smaller. Set aside.

  4. Cream butter and sugar together until smooth. Beat in egg, then milk and vanilla – mixture will look lumpy. Fold in fruit/nuts/chips by hand. Set aside.

  5. Blend together flour, baking powder, baking soda, salt and spice. Add wet ingredients to dry ingredients and fold together with a spatula without over mixing. Spoon 1/3 cup batter into each muffin cup. Sprinkle on a Tbsp. streusel topping.

  6. Bake 30-35 minutes until golden. Cool about 15 minutes as the hot muffins are very soft and may fall apart if handled right away.

  7. Some suggestions: Strawberry choc-chip (1 1/2 cup strawberries, 1/2 cup chips), peach blueberry, mango banana chip, papaya red raspberry, apple cranberry.
