Artichoke Cheesecake

Ingredients

  • 1/4 cup fine, dry breadcrumbs (store-bought)
  • 1/4 cup grated parmesan cheese
  • 2 tbl dried Italian seasoning
  • 2 (8oz) pkg cream cheese, softened
  • 1 cup crumbles feta cheese
  • 3 large eggs
  • 1 (8oz) container sour cream
  • 1 (14oz) can artichoke hearts, drained and chopped
  • 3/4 cup chopped red pepper
  • 3/4 cup chopped green pepper
  • 3/4 cup chopped green onion (including 1/2-inch green tops)
  • 1 large garlic clove, pressed
  • 1 tsp dried tarragon
  • 1 tsp dried basil

Directions

  1. Generously butter a 9-inch springform pan. Combine first 3 ingredients; coat bottom of pan with breadcrumb mixture and set aside remaining mixture.

  2. Process cream cheese, eggs, and sour cream in food processor until smooth, stopping to scrape down sides. Add feta, eggs, and sour cream. Process until smooth. Add chopped artichoke and next 6 ingredients to processor. Stir well. Pour mixture into prepared pan.

  3. Bake uncovered at 375 for 45 to 50 minutes.Cool completely in pan on wire rack. Chill at least 2 hours.

  4. Carefully remove sides of springform pan. Pat reserved breadcrumb mixture on sides of cheesecake.
