Stuffed Artichokes

Ingredients

  • 3 artichokes
  • 3 gloves minced garlic
  • 1 small onion, grated
  • 1 8oz bottle olive oil
  • 4 cups italian brea crumbs
  • 1 tbs parsely
  • 6 oz romano cheese, grated
  • salt & pepper

Directions

  1. Cut off 1/2" off top of leaves. Cut stem so artichoke can stand. Place artichoke upside down and press firmly. Mix garlic, onion, bread crumbs, parsley and cheese by hand. Season with salt and pepper. Stuff inside leaves. Put artichokes in heavy pot. Pour olive oil slowly over each artichoke, saturate each one. Pour about 1" water in bottom of pot. When water boils, turn heat down to simmer, cover & cook about 1 hour.
