Chicken & Vegetable Egg Rolls (Baked)

Serves 8 people

Ingredients

  • 1 lb. ground turkey or chicken
  • 1 clove garlic
  • Shredded vegetables: cabbage, carrots, zucchini, etc)
  • 1 can water chestnuts (optional)
  • 1 bunch green onions, chopped
  • 1 package egg roll wrappers
  • 1/4 cup soy sauce
  • 2 T corn starch

Directions

  1. Cook ground turkey in a skillet.

  2. Or use sliced leftover grilled chicken

  3. Season with garlic

  4. When completely cooked, add soy sauce, cornstarch, cabbage and carrot mix, water chestnuts, onions.

  5. Stir fry until cabbage becomes somewhat soft.

  6. Remove from heat.

  7. Spoon into egg roll wrappers.

  8. Fold according to directions ont he package.

  9. Bake at 450 for 15 minutes or until lightly browned.

  10. Serve with sweet and sour sauce or peanut sauce.
