Spinach Feta Spring Rolls

This is a fusion of Asian and Greek food. I really love Spinach Feta bites, but I didn’t like all the calories that come with the pastry shells that the bites usually come in. Conversely, I really enjoy spring rolls, but don’t really enjoy the preparatoin involved in making them. So, here is the best of both worlds.

Prep time: 10 minutes
Cook time: 10 minutes
Serves 1 people

Ingredients

  • 10 oz. chopped spinach (I use frozen)
  • 2 oz. feta cheese (I like the garlic herb flavored cheese)
  • 2 oz. other cheese (I prefer mozzarella)
  • 1 small red onion, diced

Directions

  1. Toss and mix all ingredients together.

  2. Wrap in foil, and place on cookie sheet in the oven.

  3. Bake at 400 F for 10 minutes.

  4. Let cool for 1-2 minutes.

  5. Assemble in spring roll skins.

  6. Enjoy!
