Chicken Enchiladas

Serves 4 people

Ingredients

  • 2 cups chicken breast meat, already cooked and shredded
  • 1/2 cup green chilis
  • 1 cup grated cheddar cheese
  • 12 tortillas
  • 2 cups cream of chicken soup
  • 2 cups sour cream
  • 1/4 cup green chilis
  • 1 cup cheddar cheese

Directions

  1. In a bowl mix chicken, 1/2 cup green chilis and 1 cup grated cheddar cheese.

  2. Spoon mixture into tortillas, roll tortillas and place in casserole dish with the “open” side down.

  3. In a bowl mix cream of chicken soup, sour cream and 1/4 cup green chilis.

  4. Pour soup mixture over enchiladas in casserole.

  5. Cover with cheese.

  6. To cook: Bake in 350 degree oven.
