Layered Black Bean Dip

Ingredients

  • •1/2 cup black beans, canned, low-sodium
  • •2 tablespoons sour cream, fat-free
  • •2 tablespoons salsa
  • •1 tablespoon green onion, chopped
  • •1/2 cup lettuce, shredded
  • •1 ounce cheddar cheese, low-fat
  • •4 slices jalapeno
  • •1 teaspoon cilantro, fresh
  • •1 ounce tortilla chips, baked, unsalted

Directions

  1. Mash black beans with a fork or potato masher. Spread across a serving plate. Spread sour cream and then salsa evenly over bean spread. Wash green onion and lettuce. Chop onion finely and shred lettuce. Layer onion, lettuce, cheese, then jalapeno (chopped) in the order listed over lettuce. Sprinkle with chopped cilantro and serve with chips.
