Potatoes with Apples (Himmel und Erde)

Ingredients

  • 1 Tbsp. sugar
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 c. water, cold
  • 9 potatoes, peeled and cut into 1 in. cubes
  • 1 lb. apples, tart cooking, peeled, cored, and quartered
  • 1/2 lb. bacon, cut into 1/4 in. dice
  • 2 onions, peeled and sliced 1/8 in. thick and separated into rings
  • 1 tsp. cider vinegar

Directions

  1. Combine sugar, 1 tsp. salt, pepper in 2 c. of water. Drop potatoes and apples and bring to boil. Reduce to medium and cover. Simmer until potatoes are tender but not falling apart.

  2. In skillet, cook bacon and remove from skillet. In remaining fat, cook onions for 8-10 minutes until rings are soft and light brown.

  3. Just before serving, add remaining tsp of salt and vinegar into the potatoes and apples. Transfer entire contents of skillet to a bowl and serve topped with onion rings and bacon.
