Apple Strudel (Apfel Strudel)

Ingredients

  • 2 c. flour
  • 1/3 tsp. salt
  • 1 eggs
  • 2 tsp. cooking oil
  • 3/4 c. water, lukewarm
  • 1 c. butter, melted
  • 4 apples
  • 2 Tbsp. vanilla extract
  • 2 Tbsp. brown sugar
  • 2 Tbsp sugar
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 2 Tbsp. brown sugar
  • 1 c. walnuts, chopped
  • 2 tsp. lemon zest
  • 2 Tbsp. butter
  • 3/4 bread crumbs
  • 2 Tbsp. raisins
  • 3 Tbsp. currants

Directions

  1. Mix dough ingredients. Slam on floured board, cover with cooking oil (not olive oil) and let rest for 30 minutes

  2. Wash, core, and pare apples. Cut into slices about 1/8 in. thick and put into bowl with vanilla extract and 2 Tbsp. Brown sugar. Toss.

  3. Mix together sugar, cinnamon, and allspice. Blend in 2 Tbsp. Brown sugar and set aside.

  4. Chop walnuts and set aside. Grate lemon peels and set aside. Melt 2 Tbsp. Butter in skillet and toss bread crumbs in butter until coated.

  5. Stretch dough as thinly as possible. Cut off thick outer edges of dough with scissors. Allow stretched dough to dry, about 10 minutes.

  6. Paint dough with ¼ c. melted butter. Sprinkle bread crumbs over dough leaving sides free of filling so they can be folded over apples.

  7. Cover crumbs with apples slices and sprinkle with lemon peel. Toss nuts, raisins, and currants. Sprinkled spiced sugar mixture over the nuts and fruit.

  8. Drizzle mixture with ½ c. melted butter.

  9. Fold dough on 3 sides over the filling beginning at the narrow end. Then roll dough over.

  10. Bake at 350 F for 35-45 mintues.
