Ingredients

  • 1/4 c. vegetable oil
  • 4 onions, chopped
  • 6 garlic cloves, minced
  • 3 1/2 lbs. ground beef
  • 1 1/2 lbs. beef sirloin, cubed
  • 2 (14.5 oz) cans peeled and diced tomatoes with juice
  • 2 (12 oz) beer, dark
  • 2 c. coffee, strong brewed
  • 4 (6 oz) tomato paste
  • 2 (14 oz) beef broth
  • 1 c. brown sugar, packed
  • 7 Tbsp. chili powder
  • 2 Tbsp. cumin seeds
  • 2 Tbsp. unsweetened cocoa powder
  • 2 tsp. dried oregano
  • 2 tsp. ground cayenne pepper
  • 2 tsp. coriander
  • 2 tsp. salt
  • 8 (15 oz) kidney beans (to taste)
  • 8 hot chile peppers, seeded and chopped (to taste)

Directions

  1. Mix and cook 2 hours in cast iron pot over an open fire. Stir often.
