Chicken Breasts with Goat Cheese and Fire-roasted Tomatoes

Good for the calorie conscious and tasty as well!

Serves 4 people

Ingredients

  • 4 (4 oz) trimmed boneless, skinless chicken breasts
  • Seal salt and pepper to taste
  • olive oil spray
  • 1/2 cup canned, drained, diced fire-roasted tomatoes with garlic
  • 2 ounces (about 1/2 cup) goat cheese crumbles
  • 2 tbsp. finely slivered fresh basil leaves or more to taste

Directions

  1. Season chicken with salt and pepper. Place in a medium ovenproof nonstick skillet over high heat. When it’s hot, lightly mist the skillet with olive oil spray and immediatley add chicken sideby side to the pan so it does not touch. Cook chicken just until it is golden brown on outside, 1 to 2 minutes per side.

  2. Remove pan from heat and top each piece of chicken evenly with about 2 tbsp. tomatoes, followed by about 1/2 ounce cheese.

  3. Transfer skillet to a preheated 350 degree oven. Bake about 5-9 minutes until chicken is no longer pink inside and cheese is melted. Sprinkle evenly with basil. Serve immediately.
